Uplands Cheese Company produces Pleasant Ridge Reserve, a unique, traditional style, farmstead cheese and Rush Creek using their own pasture based milk and centuries-old cheese making techniques.
Pleasant Ridge Reserve is an artisanal farmstead cheese made from the unpasteurized, hormone-free milk of their herd of Wisconsin cows, fed and managed using natural “old world” practices. The cows graze lush pastures from early spring through fall, yielding milk with varied and subtle flavors and excellent nutritional value. The flavors of the pasture grasses, herbs, wildflowers and clovers are detectable in the cheese.
Similar to French Gruyeres, Pleasant Ridge Reserve is superb for cooking and can be used in soups, fondues, gratins and omelets.
Rush Creek is produced only in the fall, as the diet of the cows begins to change from summer pasture to the winter’s dry hay. This rich milk is perfect for a cheese like Rush Creek, so soft and decadent that it’s often referred to as savory custard. Each cheese is wrapped in spruce bark, which gives shape to the cheese and imparts a subtle woodsy flavor.
Availability of Rush Creek is from late October thru December, but usually sells out. Pre-orders are recommended.
